My sister just bought SSX for PS3 and we both want to play. If I use a different EA Origins account than hers can we both play our own games? If that makes sense...

Did the game come with one of those online pass codes? If so, it's possible that the online features of the game will be tied your sister's account, which means you could play the game offline, but you would have to use her account to play online. (You have nothing to worry about if there was no online pass code included.) The only way to know for sure is to try to sign in with your account. If you can't, you know the code locked you out, and if you can, then you will be able to play without affecting your sister's account.
